- The PME activity is based on the enzymatic hydrolysis of a pectin substrate at pH4.0 & 40 deg C
- Recommended industry dosage is between 1g – 2g / Kg of fruit or vegetable
- Calcium ions should be used to optimize results of pectin gelation
