Sumizyme PME is a purified pectin esterase used to enhance fruit and vegetable texture.

THE SCIENCE OF SUMIZYME PME:

  • Pectin Methyl Esterase (PME): 1.000 PME u/g SNC method (Standardised with glycerol)
  • The PME activity is based on the enzymatic hydrolysis of a pectin substrate at pH4.0 & 40 deg C
  • Recommended industry dosage is between 1g – 2g / Kg of fruit or vegetable
  • Calcium ions should be used to optimize results of pectin gelation
